Hospitality supplier spend analysis

Hospitality supplier spend analysis for hospitality operators.

Understand which suppliers account for venue spending and where a purchasing review should begin.

Separate supplier spend from supplier stock share

Invoice spend measures what the venue purchased during a reporting period. Inventory stock share measures what remains on hand. A supplier can lead one measure without leading the other, particularly after a large delivery or before a busy trading period.

Use a consistent category and date window

Compare suppliers within the same venue, category and period. Food and beverage have different demand patterns, so a combined total can hide a useful category-level story. Payment status provides another view of supplier exposure but does not change the invoice’s recorded value.

Investigate concentration before treating it as a problem

A high supplier share may reflect a specialist product range or an agreed sourcing policy. Check invoice details and purchase timing before recommending a switch. Spend concentration alone does not demonstrate poor pricing, service failure or an available alternative supplier.

Questions

What operators usually ask.

Is supplier share measured by value or units?

Purchasing spend is a value measure. Inventory analysis distinguishes stock value and units; those percentages should not be presented as interchangeable.
