Hospitality revenue sales-mix analysis

Hospitality revenue sales-mix analysis for hospitality operators.

See how food, beverage, tobacco and other categories contribute to venue revenue.

Calculate mix from the same revenue total

Each category’s share uses the total revenue for the selected venue and period. A percentage based on a different date range can misrepresent the mix. Keep the category names and recorded sales inputs consistent across daily submissions.

Read category movement alongside total sales

A category can gain percentage share while its absolute revenue falls if other categories fall faster. Review AED values and percentages together. This distinction matters before treating a larger category share as a successful sales initiative.

Avoid using mix as a margin estimate

Revenue mix does not establish profitability by category. Purchase timing, stock accounting and missing costs can affect the interpretation. Use sales mix to select a question for review, then consult the appropriate cost inputs before making a margin claim.

Questions

What operators usually ask.

Is a higher beverage share always better?

No. It describes the revenue composition. Evaluate total revenue, guest demand and relevant costs before judging the outcome.

How can we review this with our own venue workflow?
